Wistachio Pesto Crusted Salmon 

Preparation time: 10 minutes Cook time: 20 minutes Serves: 4 to 6


● 4 to 6 Salmon Filets

● 1/2 cup Backattack Snacks Wasabi Ginger

● 1/2 cup Extra Virgin Olive Oil

● 1 tsp fresh squeezed lemon juice

● Salt and pepper to taste

● 1 tbsp Olive Oil


1. Preheat oven to 350℉

2. In a food processor, combine Backattack Snacks Wasabi Ginger Almonds, lemon juice and pulse 3-4 times then slowly add ½ cup extra virgin olive oil and blend until smooth.

3. In a hot pan add the 1 tbsp olive oil and saute salmon filets skin side up until golden brown

4. Remove from heat and smear the Wasabi Ginger Pesto over salmon, and finish in a 350℉ oven until desired temperature
